Memere's New York Cheese Cake



Memere called this her New York Cheese Cake. It looks surprisingly similar to her other Cheese Cake recipes but, here it is, in her own hand writing.


New York Cheese Cake ingredients: Graham Cracker Crumbs, Sugar, Cinnamon, Ginger, Melted Butter, Cream Cheese, Sour Cream, Eggs, Almonds and Vanilla.

Memere's Published Cheese Cake Recipe

Memere's Famous Cheesecake

How our dear Memere ever followed this recipe card is beyond my understanding.

Memere's Famous Cheesecake

Memère’s Famous Cheesecake
Most often Memère used a 10” spring form pan for preparing Cheesecake.
These are my interpretations of her writing. If you should find any errors Please let me know.


Graham Cracker Crust


1½ Cups (10 oz) Graham Crackers Crushed

¼ Cup Sugar

½ tsp. Cinnamon

⅛ tsp Ginger

¾ Stick Butter –melted

Combine all ingredients.

Press into bottom of 10” Spring Form Pan.

Bake a 350º For 5 Minutes.

Fill with your favorite filling & follow filling directions.


Ginger Pecan Crust

25 Ginger Snaps Crushed

½ Cup Well Chopped Pecans

½ Stick Butter Melted

Combine all ingredients.

Press into bottom of 10” Spring Form Pan.

Bake a 350º For 5 Minutes.

Fill with your favorite filling & follow filling directions.


Chocolate Crust

1½ Cups (10 oz) Graham Crackers Crushed

6 Tablespoons Butter Melted

¼ Cup Sugar

¼ Cup Cocoa

¼ tsp. Cinnamon

⅓ Cup Well Chopped Pecans

Combine all ingredients.

Press into bottom of 10” Spring Form Pan.

Bake a 350º For 5 Minutes.

Fill with your favorite filling & follow filling directions.


Cheesecake Filling

4½ - 8 ounce Packages Cream Cheese

1½ - Cups Sugar

6 Eggs

1½ tsp Vanilla

Combine ingredients in a large bowl.

Beat for 15 minutes until smooth.

Bake for 40-45 minutes at 375º.

Cool for one hour. Add topping (below).

After baking the topping refrigerate for 24 hours.

Then decorate with jam, fruit or fruit topping.


Cheesecake Topping

1 Pint Sour Cream

½ Cup Sugar

1 tsp Vanilla

Beat until smooth. Top cooked cheesecake.

Bake for 10 minutes in a 425º oven.

Refrigerate Cheesecake for 24 hours.


Fresh Fruit Topping


Glaze:

½ Cup Fruit

½ Cup Water

½ Cup Sugar

2 TBSP Corn Starch

⅛ tsp Salt


½ TBSP Butter

Combine first 5 ingredients in a sauce pan. Cook until thick. Remove from heat, add fruit & butter. Cool. Pour over Cheesecake and additional fresh fruit if desired.


Fresh Fruit Pie

1 Baked pie crust.

4 Cups Blueberries

Using recipe above – Double Glaze recipe.

Now... If you are wondering about the photo of Hugh Jackman included here let me explain... As Leopold in the movie "Kate & Leopold" Hugh Jackman's lines about butter have stuck with me since the first time I laid ears on them. "Fresh creamery butter. Is there anything more comforting?" The way he spoke these words, just made me crave BUTTER! I may never eat margarine again!!! If you have the time & have not yet seen the movie you may enjoy watching it.
