George's Fudge

This recipe from George makes a LOT of fudge. It is similar to Memere's Fudge but I think that it will need a slightly larger pan to accommodate all the ingredients. There was no second page to the recipe so... the second page is from another fudge recipe. It should be accurate information except that there is no pan size.

The recipe calls for condensed milk. I like Pet Milk Brand Condensed milk. They have some delicious mouthwatering recipes! Right mouse click on the Pet Milk can to navigate to their website. You will find all the recipes shown in the photo.

You can use another brand of Chocolate Bark as a substitute. I have used Plymouth Pantry with good results. Right mouse click on the photo if you would like to see which BIG BOX Store carries it!

Finally here in Southern New England, Hood is probably the best known milk producer around, and yes, they have many more recipes for you to peruse.

Chewy Coconut Centers

I remember Memere telling me that if it weren't for her sweet tooth, she would have disappeared. The incredible number of candy & cookie recipes that were in her recipe box are proof of that!

Memere LOVED coconut & often ordered it from Bob's Red Mill because they had a Wheat-Free packaging facility. These candies are great for those who have Ciliac disease or are gluten intolerant.

Candy Coated Pretzels or Fruit

This simple method of melting candy coating is so versatile , you can coat just about anything you can dream of. I was introduced to chocolate dipped Sandwich Cookies this past year. YUM! They seemed so special but really took little time. This recipe calls specifically for Eagle Brand Candy Coating. Unfortunately it seems that the product may have been discontinued. You can easily substitute Wilton's candy melts, Chocolate Bark, or any brand of chocolate coating wafers. They can be found at some of the big box stores as well as some craft stores. If you can't find them locally follow some of the links below. Have Fun Playing With This!

Pralines & Cinnamon Pecans

Slightly different from Candied Pecans, Pralines & Cinnamon Pecans were sometimes found on Memere's Holiday Tray Master List. The yummy picture below is from the Food Network. Click on the photo & find their praise-worthy Praline Recipe.

The Cream Pralines recipe below was found in one of Memere's vintage (1951) Candy Books. It seems surprisingly similar to her partial Candied Pecans recipe. Also shown, is her favorite Cinnamon Pecans recipe.

Ingredients for Cinnamon Pecans: Pecan Halves, Evaporated Milk, Sugar, Cinnamon, Water, Vanilla.

Candied Pecans

Memère’s Master List of Goodies, for Christmas gift giving, was the very first post on this blog. All recipe posts so far have been following this list. Imagine my surprise when the only hand-written recipe for Candied Pecans was the one below. I believe that there was more to it than Memère wrote down. Perhaps someone else in the family has the remainder of this recipe.

Rocky Road Candy

This is probably the FASTEST of all the candies on Mom's annual Christmas Tray list. It is so simple that she actually simplified the recipe to contain only 8 words. The remainder of the recipe she kept in her head.

Click on the recipes to enlarge.
Ingredients For Rocky Road Candy: Raisins, Nuts, Miniature Marshmellows & Melted Chocolate.

The second version above, of the ROCKY ROAD CANDY RECIPE was also found in her recipe box. It originated from the SunSentinal Newspaper of Palm Beach in the Boynton Beach Edition. You can find lots of other great recipes at their website! Just Click on the photo below to open their Food section with their latest recipes. The flowerless chocolate cake pictured is featured as you scroll down the page. This recipe is outrageously rich but suitable for those with Celiac disease or allergies to gluten or flour.

Penuche Fudge is one of Ken's favorites. His mother made it frequently, so when Memère came to visit & offered to make this, he was in heaven! Here are two versions. The "Abby" version is one that Memere saw fit to cut from a magazine. Thanks Abby, whoever you are. Please let me know if this is your version.

Memere's Fudge

I remember Memere making this fudge since I was a kid. It is my all time favorite! It has a unique consistancy when it is made properly. Timing is everything. Be sure to test accurately for soft ball stage.

The recipe is believed to be an original “Off-The-Jar” Fluff recipe from the 50's or 60's, but it can’t be found on their site. Click here if you would like to see all of Fluff’s best recipes on line.
